Where Do You Get Your Selenium? (Follow This Recipe)

If you’re anything like me, you answered that question with another question: what IS selenium? Well, I’m here to abuse Google and tell you. Selenium is a mineral which helps protect your skin from free-radicals, it is a powerful antioxidant, and helps maintain proper thyroid function.

It used to be a lot easier to get selenium in our diets, but over-farming has depleted the selenium found in soil, and therefore grains are no longer a good source. The best source possible? Brazil nuts. Just THREE can give you your recommended daily intake of selenium.

Brazil nuts are also good for those with high cholesterol, detoxification (including heavy metal detox), and fertility (for both men AND women).

All well and good. I don’t know about you, but I really don’t know what to do with Brazil nuts, apart from just eating them whole. So, again, I abused Google. There are a lot of recipes out there featuring Brazil nuts (mostly desserts). I found one for Baked Stuffed Avocado by someone named “Wrestler” on Food.com. As per usual, I adapted it for you, Better Bulk-style.

BETTER BULK

RECIPES:

BRAZIL NUT STUFFED

AVOCADO

1 organic onion, chopped

1 tbsp Omega Nutrition coconut oil

2 large ripe avocados, stones removed

4 ounces chopped Brazil nuts (113 g on our weigh scale, approx. 35 nuts)

4 ounces Black River Cheese, any variety, diced

2 tbsp parsley flakes

2 tbsp Filsinger’s Organic Apple Cider

Sea Salt

Black pepper

Preheat oven to 400 F. Saute the onion in coconut oil until it browns and softens. Scoop flesh from avocado skins, taking care not to damage the skins. Dice the avocado flesh, and mix with onion, nuts, cheese, parsley, and cider. Season to taste with salt and pepper. Spoon the mixture into the avocado shells. Place in a shallow, oven safe dish and bake for 10-15 minutes. Serve immediately.

    My husband and I made the brazil nut stuffed avocado recipe and it was delicious. I’ll be looking for more delcious ideas from you guys!
